Manifesto

I.
The world is loud. Fast. Breaking.
We have forgotten how to stop.
II.
Osutoria is a pause.
A breath between the noise.
A sound remembered. A moment caught.

We believe the ordinary is precious.
The carrot. The parsnip. The root pulled from frozen soil.
These are no lesser ingredients waiting to be elevated.
They are teachers, waiting for us to see.

We have learned to overlook what is closest.
We import luxury while treasure rots beneath our feet.
We chase the rare and ignore the real.

Osutoria is learning to see again.

Simple is not easy.
To strip away is harder than to add. To reveal is braver than to decorate.

Founder of Osutoria

Matthias is an award-winning director, writer, and producer who spent decades shaping the landscape of global media—from co-founding the internationally successful pop groups Edelweiss and Bingoboys to building MTV Central and advising the leadership of Red Bull and RTL Group.

Today, he applies that same eye for composition and devotion to detail to a different medium: the plate.

After a transformative turn that saw him train as a Sake Sommelier and brewer in Japan, Matthias founded central Europe’s first commercial sake brewery, SAKE.WIEN. Following its closure due to the pandemic, he further refined his craftsmanship at Vienna’s three-Michelin-star restaurant Amador, earning his chef’s certification and launching Osutoria.

Decades of storytelling expertise meet culinary craftsmanship. Every dish is treated as a scene, every flavour as a plot point, and every meal as a lived story.
